Old Fashioned Creamy Cauliflower Soup


  • 1 head cauliflower, cut into florets

  • 3 tablespoons coconut oil melted

  • salt and pepper for your taste

  • Toss above 3 ingredients in a bowl or ziplock bag

  • 1 tablespoon Coconut oil

  • 1 medium onion, diced

  • 2 cloves minced garlic

  • 1 teaspoon crushed Thyme

  • 3 cups chicken broth (check ingredients)

  • 1 1/2 cups shredded extra sharp white cheddar

  • 1 cup heavy cream(no carbs)

  • salt and pepper for your taste

  1. Combine cauliflower florets in the oil along with the salt and pepper as directed above then put them in a single layer on a large baking sheet and bake in a preheated 425 degree oven until light golden brown, usually 20-30 min.

  2. Heat oil in a large sauce pan over medium heat, add the onion and cook till tender  5-7 min.

  3. Add the garlic and thyme and cook until you smell that beautiful aroma, about 1 min.

  4. Add the chicken broth and the cauliflower, let it come to a  boil, reduce heat and simmer with lid on for 20 min.

  5. Now blend the soup in a blender or using and emersion blender till it is a creamy consistency.

  6. Stir in the cheese it should melt without bringing it to boil.

  7. Stir in the heavy cream, add salt and pepper to your liking and remove from stove.

  8. Enjoy the warm comfort of your fresh creamy homemade soup!

Everyone needs a decent heavy duty pot to make soups in where you can put the lid on, turn the heat off and it’s not going to lose heat in the next hour. This is what I use and love it!
