Keto Pumpkin Spice Doughnuts


3/4 cup Super fine almond flour

1/4 cup Psyllium husk powder

2 eggs plus 1 yolk

4 Tbsp Kerry Gold Butter

1 Tbsp Rodelle Pumpkin Spice Extract

3 Tbsp Erythritol or Swerve Granulated

1 Tsp Bourbon Vanilla

1/4 Tsp Saigon Cinnamon

1/2 Tsp Baking Soda

1/8 Tsp Salt

Set oven to 350 preheat, add all ingredients in a bowl and mix until light and airy. Spoon mix equally into doughnut pan and bake till toothpick comes out clean usually around 15 minutes give or take.

For glaze use 4 Tbsp powdered erythritol or swerve confectioners and mix with 1tsp cinnamon and 1-2 Tbsp of Heavy cream or water to desired consistency. Drizzle over doughnuts after they have cooled but are still warm. Enjoy!
