Keto Chicken with Bacon Cream Sauce


 For Chicken:

4 Chicken Breasts

1/4 Shredded Gouda or Swiss (or your favorite)

2 Tbsp Primal Kitchen Mayo (or other keto friendly mayo)

Sauce:

5 Slices of thick cut bacon fried and reserve grease in pan for later

3/4 cup Heavy Cream (no carb)

1 oz Full Fat Cream Cheese

1/8 cup Shredded Gouda or Swiss (or whatever cheese you used in the chicken)

1/4 Tsp Garlic Salt

Salt and Pepper to taste

Preheat oven to 400 F

Butter each chicken breast with the mayonnaise and top with cheese placing in glass baking dish. Bake uncovered for 45-50 minutes. Time will depend on thickness of chicken breast and your oven so please check for doneness.

When your chicken is almost done start your sauce in the large skillet used for bacon. Warm up grease on low heat and whisk in heavy cream till combined and bubbly around edges. Add cream cheese and whisk till smooth. Add cheese and garlic salt and keep stirring. Throw in all but 2 slices of bacon. Save the 2 pieces of bacon for top of chicken garnish.

Serving is one chicken breast with 3 Tbsp of sauce and reasonable amount of bacon crumbles.
