Jenna’s Monterrey Zucchini Boats


6 Medium zucchini

1 lb Ground beef

6 oz Chopped onion

1 Tbsp Avocado oil

6 oz Bell pepper chopped

1 Lg tomato diced

2 Tsp Garlic minced

1/4 cup Cilantro

1 Tsp Chili powder

1 Tsp Cumin ground

1 cup Sharp cheddar or Chihuahua cheese

Preheat oven to 375 degrees.

Slice zucchini in half and scoop out pulp, chop and save for later. Line a baking sheet with parchment paper or lightly grease with oil. Heat oil in skillet and cook onion for 3 minutes. Add garlic, beef, bell pepper, tomato and spices. Brown beef till no pink left and peppers are soft. Remove from heat and add chopped zucchini pulp and cilantro and stir. Fill zucchini boats equally and top with cheese. You could also add avocado and sour cream if you want more toppings.

Bake for 20-25 min. Enjoy!
