Jenna’s Zucchini Lasagna

 3 Medium zucchini thin sliced long ways

1 Jar low carb Marinara Sauce

1 egg beaten and mixed with cottage cheese

1 Cup 4% milkfat Cottage Cheese

1 lb ground beef or Italian sausage cooked

6 Slices of Provolone cheese cut into strips

3 cups of Mozzarella cheese

1/4 cup finely shredded Parmesan cheese

Preheat oven to 375 degrees

Grease glass or ceramic 9x13 dish

Starting with a little sauce on the bottom of dish then start layering ingredients zucchini, sauce, cottage cheese/egg mixture, mozzarella, meat, repeat. Ending with mozzarella, provolone, parmesan on top. Bake for 35-40 min or till cheese is golden and lasagna is bubbling around edges. Remove and let cool 10 min before serving. If you’d like you can always add fresh basil and oregano to this if you wish. Enjoy!

I have a white one similar to this one and love the way it bakes evenly and doesnt burn on the edges.
