Jenna’s Keto Stuffed Pepper Soup


2 lbs Ground Beef

1 quart water

1 quart Beef Broth (watch ingredients)

2 -14.5 cans Tomato sauce (watch ingredients)

2 -14.5oz cans diced tomatoes

1/4 cup Lakanto Gold

2 Tsp Himalayan Pink Salt

1 Tsp Pepper

2 Tsp Beef boullion granules (watch ingredients)

3 medium green bell peppers diced

2 cups riced cauliflower

1 small onion chopped

Cook ground beef and onion in large stockpot till done. Drain meat. Put meat back in stock pot. Add all ingredients to pot except for riced cauliflower. Bring to boil. Then reduce heat and simmer for 30-40 or till peppers are tender.

Cook two cups of riced cauliflower (can steam in microwave) then add to soup and stir. May need extra beef broth so keep a couple extra cans on hand and just add if too thick or needs more beef flavor.  Enjoy!
