Jenna’s Keto Mock Bailey’s Irish Cream
1 cup of Heavy Whipping cream (no carbs)
1 cup of keto condensed milk (recipe here)
1 tablespoon of concentrated (strong) espresso
1/2 teaspoon Bourbon vanilla extract
1 tablespoon of cocoa powder
1 tablespoon of water
200-250 ml Irish whiskey
Put the whipping cream and the condensed milk with the vanilla extract in a large bowl and stir well with a whisk.
In a separate container, mix the espresso coffee with the cocoa powder and a small amount of water to make a paste without lumps.
I first added 200 ml of whiskey and half of the espresso cup to the mixture (stirring well with a whisk) and then tasted it was good. And then to taste to see if there may be some more whiskey or some espresso / cocoa. Just until it is nice! I came to about 250 ml of whiskey and almost all of the espresso, if you like it stronger.
Pour into a nice (well-rinsed) bottle and store in the refrigerator. Who would have thought that making Baileys yourself was almost as easy as buying a bottle!
And from experience I can tell you that it will stay in the fridge for at least 3 weeks.
