Jenna’s Keto Jamaican Jerk Pork Roast

3-4 lb Pork Shoulder

1/4 cup Jamaican Jerk Spice blend (recipe here)

2 Tbsp Olive oil

3/4 Beef stock

Rub roast with oil then spice blend. Set Instapot on saute and brown roast on all sides then add beef stock. Put lid on instapot and put lever on seal. Hit manual , high pressure for 50 minutes. Release pressure by carefully turning lever to vent. Shred and then serve.
