Jenna’s Keto Italian Beef

(for Instapot/Slow Cooker)



4-6 lb Beef Roast

1/2 Lg onion

2 Tbsp Olive or Avocado oil

3 Tbsp  Jenna’s Italian dressing mix (recipe here)

16 oz jar Peperoncini peppers

1 1/4 cup water

Instapot instructions

Press Sauté on Instapot . Add oil and add roast. Brown roast for minutes on each side then add onions, peppers and about 1/8-1/4 cup of pepper juice depending on how spicy you like it, Italian seasoning and water. Put Instapot lid on and turn valve to seal. Press manual high pressure and set time to 60 minutes. When timer sounds put valve on vent carefully. After pressure is fully released, remove lid, shred beef and add rest of  peppers. Just peppers, not juice. Enjoy! Servings depend on how big your roast is.
