Jenna’s Keto Golden Bourbon Chicken


2 lbs boneless skinless chicken

1 tbsp Coconut oil (for cooking chicken in skillet)

1 tsp Himalayan Pink salt

2/3 Cup Coconut Aminos

1/2 Cup Tomato sauce

1 Cup Chicken broth (check for sneaky ingredients)

2/3 Cup Coconut Vinegar

2 Cloves of Garlic smashed and diced

2 Tsp fresh grated Ginger Root

1/2 Tbsp Red pepper flakes (or 1 Tbsp if you like it HOT)

1/3 cup + 2 Tbsp Lakanto Gold (powdered in a blender)

1 Tbsp of Sesame seeds (optional)

In a large skillet over med-hi heat place coconut oil. Place chicken that has been cut into bite size pieces in heated skillet, sprinkle salt over chicken and cook chicken till done. Remove chicken and set aside. Place skillet back over med-hi heat. Continue to add aminos, tomato sauce, chicken broth, coconut vinegar, garlic, ginger, red pepper flakes and powdered Lakanto Gold whisking after each ingredient addition. Bring to boil for a few minutes then add your cooked chicken back into skillet. Turn heat down to med-lo and simmer for ten minutes or till sauce starts to thicken. Turn off heat and let sit for a few minutes. Then serve over steamed broccoli or cauliflower rice!  Makes 6 servings.
