Jenna’s Keto Enchilada Sauce

  – If you want it thicker add 1/4 Tsp xanthum gum

Combine all ingredients in a microwave safe bowl (or on stove in a sauce pan). Stir until well combined. Cover and cook 1 minute on high. Stir & cover and cook 40 seconds. Stir then cook another 30 seconds. Remove from microwave, stir. If  it’s too thin add xanthan gum and whisk briskly. Keep sauce in fridge for a week or freeze.
