Jenna’s Keto Enchilada in a Bowl

3 cups of pulled chicken (baked or rotisserie chicken is perfect texture)

1 cup red enchilada sauce (keto friendly recipe here)

1/4 cup water

1/4 Tsp Smokey paprika

1/3 cup onion

1 can green chilis

1 steam in bag cauliflower rice (12-14oz)

Toppings of your choice ie: cilantro, cheese, avocado, fresh jalepeno etc..

Seasoning to your taste

Place pulled chicken in a large skillet over medium heat with all ingredients except rice and toppings. Cook down on medium heat for a few minutes then reduce to low simmer to let ingredients fuse and most liquid has been soaked up. Remove from heat. Prepare rice and toppings. When rice is ready top with chicken and preferred toppings.
