Jenna’s Keto Egg Drop Soup

8 cups chicken broth (check ingredients for hidden sugars)

2 1/2 tsp fresh grated ginger root

1 cup of baby bella or button mushrooms

2 1/4  tsp fish sauce (check for hidden ingredients)

1/4 cup + 2 Tbsp Coconut aminos

1/2 tsp black pepper

7-8 eggs beaten lightly

7 green onion tops chopped ( save some for garnish if desired)

In a large stock pot pour broth and all other ingredients with the exception of the eggs and bring to a boil. Cook till mushrooms are soft then reduce heat to med-lo. Slowly pour in eggs while at the same time using a fork to mix in and create the egg “threads”. Cook for two minutes and remove from heat, garnish in bowl if desired. Makes 4 servings.
