Jenna’s Keto Creamy Chicken Chili


2 Tbsp Kerry Gold Butter

2-3 cups shredded rotisserie chicken

3 Cups Chicken broth (check ingredients)

1/8 Cup Tomato paste

15 oz can petite diced tomatoes

1 Tbsp canned green chilis

1 small onion chopped

1 Jalepéno, finely chopped

1 Tbsp minced garlic

1 Tbsp Cumin

1 Tbsp Chili powder

5 oz Full fat cream cheese (room temp)

1.2 tsp Himalayan pink salt

Cilantro and sour cream for garnish

Start by shredding your chicken. Then put butter, onion and garlic in medium stock pot over medium heat till onion is translucent. Add chicken broth, tomatoes, tomato paste and bring to a simmer. Add rest of ingredients and simmer for 20 minutes over med-lo heat.
