Jenna’s Keto Banana Bread Bars
1 1/2 cups Super Fine Almond Flour
1/2 cup Coconut Flour
3/4 cup Kerry Gold Butter (Softened but not melted)
1 1/2 cup Lakanto Classic or Erythritol
2 oz Philadelphia cream cheese (full fat) fully softened
1/2 cup avocado mashed
1 cup Sour Cream (full fat)
1 Tbsp Banana Extract
1/2 Tbsp Bourbon Vanilla Extract
2 Tsp baking soda
1/2 Tsp fine Himalayan Pink Salt
1/2 cup chopped Walnuts (optional)
Brown Butter Frosting
3 Tbsp Heavy cream
2 Tsp Bourbon vanilla extract
1 1/2 cup Lakanto Powdered Sweetener
Preheat oven to 375 degrees. Grease a 15x10 jelly roll pan with coconut oil. Set aside.
Cream together Sweetener and all wet ingredients with a hand or stand mixer till combined. Add in all dry ingredients and mix until well combined.
Spread evenly into prepared pan and bake for 22-25 minutes. Ovens vary so start checking it at 20 minutes. Bars are done when they just barely jiggle. Remove and let cool on wire rack while you make frosting.
In medium sauce pan melt butter on stove over medium heat. After melted keep close watch while stirring till butter just turns a light brown. Remove from heat add vanilla, cream and then sweetener and stir till well combined and spread over warm bars. Let everything cool then enjoy! Makes 20 bars.
